Ingredients
- ½ kg of tomatoes
- 5 peppercorns
- Piece of horseradish
- 1 tbsp Wexford sea salt
- 2 sprigs of fennel
- ½ onion, sliced
- 5 mustard seeds
- 5 cherry leaves
Instructions
- Remove tomato seeds, layer cherry leaves, tomatoes, peppercorns, horseradish, and fennel in a jar.
- Place second cherry leaf and another layer of tomatoes with spices between the layers.
- Cover with brine of salt, mustard, and onion.
- Pour the brine over the tomatoes in the jar.
- Pasteurize for 15 minutes.
