Pickled Tomatoes for Winter

Preserve summer's tangy flavors with pickled tomatoes using Wexford Sea Salt. Enjoy the vibrant taste all winter long.

Ingredients

  • ½ kg of tomatoes
  • 5 peppercorns
  • Piece of horseradish
  • 1 tbsp Wexford sea salt
  • 2 sprigs of fennel
  • ½ onion, sliced
  • 5 mustard seeds
  • 5 cherry leaves

Instructions

  1. Remove tomato seeds, layer cherry leaves, tomatoes, peppercorns, horseradish, and fennel in a jar.
  2. Place second cherry leaf and another layer of tomatoes with spices between the layers.
  3. Cover with brine of salt, mustard, and onion.
  4. Pour the brine over the tomatoes in the jar.
  5. Pasteurize for 15 minutes.
