Ingredients
- 3 kg ripe tomatoes
- 800 g sugar
- 8 tbsp freshly squeezed lime juice
- 4 tbsp freshly grated ginger
- 4 tbsp ground cumin
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 4 tsp salt
- 1/2 tsp cayenne pepper
Instructions
- Wash the tomatoes, blanch them, remove the skins and stems, then cut into small pieces.
- In a heavy-bottomed pot, combine all ingredients and bring to a boil.
- Reduce heat and simmer uncovered for 90 minutes, stirring occasionally.
- Season to taste. While the sauce is hot, pour it into sterilized jars and seal tightly.
- Invert the jars on their lids and allow them to cool and dry.
